Palmiers (a.k.a. Puff Pastry Sugar Cookies)

I had some leftover puff pastry to use up and these little cookies were the perfect way to do it. They are crunchy, sweet and delicious.

These palmiers are seriously so easy to make (if you buy already made puff pastry). They only require 2 ingredients and take almost no time to prepare. The shape of these cookies is a lot easier to make than it looks.

If you are hosting or going somewhere for Thanksgiving this year, these are the perfect treat to serve or bring. Make sure you make a big batch though, because they will be gone in a flash.

Palmiers:

1 sheet puff pastry, thawed
1/4 cup coconut sugar (or granulated sugar)
  1. Roll 2 opposite edges of the puff pastry sheet towards the center and meet in the middle. Chill in the fridge for about 10 minutes.
  2. Preheat the oven to 375° and line a baking sheet with parchment paper.
  3. Take the puff pastry out of the fridge and cut it into 1-2 inch slices.
  4. Dip all sides of the cookies into the sugar and place on the baking sheet. Bake for 12-15 minutes, until crispy and golden. Enjoy!
