Melon, Mint and Feta Salad


This beautiful melon salad is what I enjoyed for my lunch a couple of days ago and every bite was absolutely fresh and delicious. Once you have all of your cantaloupe and watermelon cut up, the rest of this salad takes less than 5 minutes to put together.


I was full for hours after enjoying this extremely healthy salad and you can enjoy a large bowl of it for very little calories. The protein in the cheese and pine nuts will keep you satisfied and you definitely get your daily dose of fruit from all of the sweet melon.


If you're hosting any parties this summer, this is the fruit salad to make. Your guests may be surprised by the mint and feta incorporated into a fruit salad, but it works! The saltiness of the feta compliments the sweetness of the fruit and the mint adds a great freshness.


I am so happy that I have plenty of leftovers of this salad to enjoy the rest of the week. It is a delicious and nutritious option to have for breakfast, lunch or a snack. Enjoy!


Melon, Mint and Feta Salad:

1 cantaloupe, diced into 1 inch pieces
1/2 large watermelon, diced into 1 inch pieces
1 cup feta cheese, crumbled
1/2 cup pine nuts
1/4 cup fresh mint, finely chopped
  1. Combine all of the ingredients in a large bowl and serve!
